The 2024 Entropy Wines Riesling is a distinctive cool-climate Riesling from Warragul in Gippsland, Victoria, made by Ryan Ponsford. Sourced from two established vineyard parcels, it shows lifted lime zest, green pear and lemon alongside white nectarine, subtle ginger, flint and crushed-stone mineral notes.
On the palate, it is dry and textural with bright acidity, citrus freshness and a gently rounded mid-palate. Wild fermentation is followed by eight months on fine lees in a combination of stainless steel and French oak, building texture and complexity while maintaining freshness. A small amount of residual sugar is balanced by the wine’s lively acidity, leading to a long, mineral-driven finish.
