The estate vineyard lies at the foothills of the Strzelecki Ranges, approximately 80 kilometres southeast of Melbourne. The region benefits from a cool maritime climate influenced by Bass Strait, with moderate summer temperatures, ample rainfall, and fertile volcanic soils. These conditions provide an extended growing season, allowing grapes to ripen slowly while retaining vibrant natural acidity and developing complex flavours. The unique terroir has established Gippsland as one of Australia's most exciting cool-climate wine regions.

Cannibal Creek is best known for its Pinot Noir, Chardonnay, Pinot Gris, Cabernet Sauvignon, Merlot, and Sparkling wines. The Pinot Noir displays vibrant cherry, raspberry, spice, and earthy undertones with silky tannins and refined structure. Chardonnay offers layers of citrus, white peach, nectarine, and subtle oak, balanced by crisp acidity and mineral freshness. The estate also produces elegant Bordeaux-style reds and aromatic whites that consistently reflect the cool-climate character of Gippsland.

Winemaking is guided by a philosophy of minimal intervention and careful attention to vineyard expression. Fruit is hand harvested where appropriate, gently handled throughout fermentation, and matured using carefully selected French oak for premium wines. Small production volumes allow close monitoring of every parcel, ensuring each wine maintains its varietal purity while expressing the unique characteristics of the vineyard and vintage.
