The 2025 Domaine Sigalas Aa is a refreshing Greek white built around Assyrtiko and Athiri, combining citrus brightness with floral detail and a gently rounded texture. Founded by Paris Sigalas in 1991, Domaine Sigalas has become one of the leading names associated with Santorini and its indigenous grape varieties. For 2025, the estate identifies Aa as PGI Cyclades, sourcing fruit from selected parcels on Santorini and other Cycladic islands, with vines aged 60 years or more. Hand-picked grapes undergo careful sorting and gentle whole-bunch pressing, followed by stainless-steel fermentation and six months on fine lees with periodic stirring.

Expect lemon zest, peach and apricot, complemented by delicate white flowers and subtle mineral notes. The palate is medium-bodied, with a lightly creamy texture balanced by vibrant acidity and a persistent, dry finish. Stainless-steel vinification preserves the fruit’s clarity, while lees ageing contributes texture and savoury depth. At 13.5% alcohol, the 2025 offers enough substance to accompany food while retaining an inviting freshness. Its appeal lies in the balance between bright citrus, softer stone fruit and understated floral complexity, making it an approachable introduction to the distinctive white wines of the Cycladic islands.

Ben’s Recommendation:
What makes this bottle particularly appealing is its combination of freshness, texture and versatility with food. For someone who enjoys dry Riesling, Chablis or mineral-driven Mediterranean whites, Aa offers a rewarding introduction to Greek varieties. I would drink it now through approximately 2029, assuming good storage, to enjoy its youthful citrus and stone-fruit character. Allow it some time in a generous white-wine glass so the floral aromas and lees-derived texture can unfold. It would be excellent with grilled octopus, lemon-and-herb prawns, salt-baked fish or zucchini fritters with feta. For a relaxed seafood dinner or an introduction to Domaine Sigalas, this is an attractive choice with bright fruit, subtle savoury detail and an easy affinity with Mediterranean cooking.
