The 2023 Domaine du Pélican Arbois Savagnin Ouillé is a fresh, non-oxidative expression of Savagnin from the Jura. The nose shows ripe yellow apple, pear and lemon zest with subtle almond, floral and wet-stone notes. “Ouillé” refers to keeping the barrels topped up during maturation, preserving freshness rather than developing the oxidative character found in some traditional Jura wines.
On the palate, it is medium-bodied with vibrant acidity and a polished, gently textured feel. Yellow apple and citrus are joined by savoury mineral notes and a distinct saline character, leading to a dry, energetic finish. Fermentation and ageing in larger oak vessels and barrels add texture while keeping the Savagnin character clear and precise.

At Wine More Cellars, this is an excellent introduction to the fresher side of Jura Savagnin, particularly for drinkers who enjoy mineral-driven, high-acid whites. Enjoy now through around 2029 and pair with grilled trout, scallops, roast chicken, mushroom dishes or aged Comté.
