The G.D. Vajra Barolo Chinato NV is a traditional Piedmontese aromatised wine built on the estate’s Barolo Albe. Around thirty herbs, roots and botanicals are infused into the wine, including cinchona bark, mountain herbs and organic Sicilian orange peel. The nose combines rose and ripe cherry with orange zest, aromatic herbs and warming spice.
On the palate, it is rich and bittersweet, with Barolo’s red-fruit character layered with bitter orange, alpine herbs and complex spice. The blend comprises 85% Barolo Albe and 15% hydro-alcoholic herbal extracts, with brown sugar completing the recipe. The finish is long, herbal and pleasantly bitter, with 18% alcohol.
Ben’s Recommendation:
At Wine More Cellars, this is a distinctive choice for Barolo drinkers interested in the traditional aromatised wines of Piedmont. Serve in a small glass and pair with dark chocolate, chocolate-based desserts, aged cheeses or citrus desserts.
