From Grenache vineyards grown & picked specifically for Rosé production. We press immediately and use white wine-making techniques (Vin-Gris style). Small amounts of Mataro are used for spice aromas. Handpicked fruit with some whole bunch press into stainless steel, indigenous yeast. Malolactic fermentation blocked, Viognier (5%) is barrel fermented.
Onion skin in the glass with aromas of raspberry, redcurrant, ruby red grapefruit and red apple fruits with hints of wildflowers, fennel, stone and soft spice. There's a touch of pithy texture on the palate and a swell of raspberry, coiled by tight acidity before the tension releases and the wine trails away, all raspberry, spice and redcurrant in its wake. - 93 points, Dave Brookes
