This non-vintage wine comprises material from the 2022 (60%) and 2021 (40%) vintages. Savagnin was fermented in a neutral oak to create a base wine onto which three strains of flor yeast were introduced.
Bright, medium yellow colour with a flor-yeast bouquet that brings to mind dry sherry and Jura Vin Jaune. It seems fresh and youthful with floral, stone-fruit and creamy yeasty aromas, as well as the typical aldehyde flor character. In the mouth it is crisp and dry, medium-intense and has a soft/juicy texture that suggests sweetness, but it finishes cleanly dry. An interesting and novel wine that would be good with cooked-curd semi-hard cheeses. - 90 points, Huon Hooke
