OCHATA BARRELS
Ochota Barrels is one of the most distinctive names in contemporary Australian wine, based in Basket Range in the Adelaide Hills, South Australia. Founded by Taras and Amber Ochota, the project combines old-vine vineyards, organic farming, spontaneous fermentation and an intuitive, low-intervention approach to produce wines celebrated for their energy, perfume and remarkable drinkability.
The idea for Ochota Barrels emerged during a surfing trip along Mexico's west coast in late 2000. After travelling and working through wine regions around the world, Taras and Amber began imagining a small wine project of their own back in South Australia. Their shared interests in wine, music, surfing and food would ultimately become inseparable from the identity of Ochota Barrels.
Taras brought considerable international experience to the project. An oenology graduate of the University of Adelaide, he worked as a flying winemaking consultant across Italian regions including Puglia, Abruzzo and Sicily, while also completing vintages in California with producers including Kunin, Arcadian, Schrader, Outpost and Hartley-Ostini. Amber's experience included vintages in Italy, vineyard development in the Adelaide Hills and wine-production work in Sweden.
Music was equally fundamental to the Ochota identity. Taras had played bass in punk bands before becoming a winemaker, and references to alternative and punk music run throughout the portfolio. Wines such as The Fugazi Vineyard, Texture Like Sun, The Green Room, Where's the Pope?, Weird Berries in the Woods and The Mark of Cain have become almost as recognisable for their names and labels as for the wine inside the bottle.
Rather than relying on one estate vineyard, Ochota Barrels works with carefully selected sites across the Adelaide Hills and McLaren Vale, with particular attention given to mature and old vines. Grenache has become especially important, alongside Pinot Noir, Syrah, Gewürztraminer, Pinot Meunier and other varieties.
The Ochota approach begins in the vineyard. Taras and Amber were strongly influenced by the small biodynamic growers of southern France, favouring organically farmed vineyards with living soils, low yields and naturally balanced fruit. Picking decisions are guided heavily by flavour and natural acidity rather than simply pursuing maximum ripeness.
In the cellar, the philosophy remains deliberately lo-fi and intuitive. Wild indigenous fermentation, small half-tonne ferments, whole bunches where appropriate, gentle pigeage and careful manipulation of skin contact are used to build complexity and texture without sacrificing fruit purity. Seasoned French oak is preferred for many wines, while sulphur additions are kept low and adjusted according to the requirements of each individual cuvée.
The Fugazi Vineyard Grenache is one of the wines that established Ochota Barrels internationally. Produced from old-vine Grenache in McLaren Vale, Fugazi demonstrates the house style particularly clearly: aromatic and intensely flavoured yet remarkably fresh, energetic and finely structured. The vineyard's Grenache was recognised by the estate as the highest-scoring Grenache in the world for the 2016 vintage.
The Green Room Grenache offers another interpretation of old-vine South Australian Grenache. Recent releases continue to emphasise perfume, spice and savoury complexity rather than sheer weight, demonstrating the lighter and more detailed direction that has transformed perceptions of Australian Grenache over the past decade.
Perhaps the most immediately recognisable Ochota wine is Texture Like Sun. The name comes from a lyric in The Stranglers' Golden Brown, the song Taras and Amber danced to at their wedding. Its blend changes between vintages and can incorporate both red and white varieties, with the objective being the final texture and drinking experience rather than adherence to a conventional varietal formula.
Ochota Barrels became internationally influential because its wines challenged conventional ideas about Australian wine. Instead of relying on concentration, heavy extraction and obvious oak, the wines demonstrated that South Australian Grenache, Syrah and other varieties could be light on their feet, fragrant, naturally fresh and intensely expressive. The estate has been listed among Wine & Spirits Magazine's Top 100 Wineries and Taras was also a Young Gun of Wine winner.
Following Taras Ochota's death in 2020, Amber Ochota has continued the project and its philosophy. Today she describes the winery as being rooted in family, community, nature and Taras's memory, while continuing to support small growers and a style of winemaking that respects the land. This continuity has made Ochota Barrels not simply an important natural-wine producer, but an enduring part of modern Australian wine culture.
