The 2023 Domaine Collotte Marsannay Cuvée Vieilles Vignes is an old-vine Pinot Noir from Marsannay at the northern end of Burgundy's Côte de Nuits, offering an excellent introduction to both the appellation and Domaine Collotte. The cuvée is assembled from several terroirs across Marsannay, typically including Les Etalles, Les Grasses Têtes, Les Favières, En Combereau and Les Boivins, with vines generally over 40 years old and some material around 50 years of age. Domaine Collotte farms around two hectares for this cuvée. The fruit is harvested by hand, carefully sorted and 100% destemmed, followed by four to five days of cold maceration and gentle indigenous-yeast fermentation designed to preserve Pinot Noir's fruit and freshness rather than extract excessive tannin.
