CAVA

Cava is Spain’s most famous sparkling wine, produced using the traditional method (Méthode Traditionnelle)—the same process used for Champagne. The wine undergoes a second fermentation in the bottle, creating fine bubbles, complex aromas and a crisp, refreshing style.

While Cava can be produced in several regions across Spain, the majority comes from Catalonia, particularly around the town of Sant Sadurní d’Anoia near Barcelona. The Mediterranean climate and limestone soils help produce sparkling wines with bright acidity and elegant structure.

Cava is typically made from classic Spanish grape varieties such as Macabeo (Viura), Xarel·lo and Parellada, which give the wines flavours of green apple, citrus, pear and white flowers, often complemented by subtle notes of toast, almond and brioche from bottle ageing.
