The nose is intensely aromatic and layered, revealing wild strawberry, red cherry and blood orange alongside rose petal, crushed flowers and spice. There are savoury notes of brioche, white pepper and flinty minerality, with subtle oxidative and nutty complexity from extended lees ageing and the addition of the perpetual reserve blend.
On the palate, it is medium-bodied with a creamy yet energetic mousse and vibrant natural acidity. Compared to lighter, fruit-forward sparkling rosé styles, it offers far greater savoury complexity and depth, sitting stylistically closer to artisanal Champagne than conventional sparkling wine. The zero dosage and perpetual reserve system give it incredible tension and complexity, making it a serious food wine as much as a celebratory bottle. Drink now or cellar through 2030+ as it develops further brioche and nutty character. Exceptional with tuna tartare, smoked salmon, duck, lobster or mushroom-based dishes.
