DOMAINE TOLLOT-BEAUT

Domaine Tollot-Beaut is a historic Burgundy estate based in Chorey-lès-Beaune, founded in 1880 by François Tollot. The name reflects the marriage of François’s son Alexandre Tollot and Aurélie Beaut in 1921, when the domaine began bottling wines under the Tollot-Beaut label. Now in its fifth generation, the estate is run by cousins Nathalie, Jean-Paul, and Olivier, who carry forward the family’s long tradition while refining its modern identity.

The domaine farms around 24–25 hectares of vineyards across Chorey-lès-Beaune, Savigny-lès-Beaune, Beaune, and Aloxe-Corton. Pinot Noir dominates the plantings, with small amounts of Chardonnay. The vineyards, rooted in classic limestone and marl soils, are managed under lutte raisonnée (sustainable farming), with low yields, plowing, and hand harvesting to ensure healthy fruit and clear site expression.

In the cellar, Tollot-Beaut favors clarity and precision. Grapes are mostly destemmed, fermentations run for around 10–12 days with gentle extraction, and wines are aged 16–18 months in French oak—about 20% new for regional and village wines, rising to 50–60% for premiers and grands crus. The approach preserves bright fruit while layering in structure and subtle oak influence.

The range spans from accessible Bourgogne and village bottlings to complex premiers crus such as Beaune Clos du Roi, Beaune Grèves, and Aloxe-Corton Les Fournières, as well as grand crus including Corton Bressandes and, in select years, Corton-Charlemagne. The style is marked by vibrant red and dark berry fruit, freshness, and purity, with greater depth and savoury complexity in the higher-tier wines. Today, Domaine Tollot-Beaut stands as a benchmark in the Côte de Beaune, admired for balancing tradition, terroir focus, and finesse.
