The Lustau VORS Pedro Ximénez NV is an exceptionally old and rare Sherry sourced from some of the oldest solera casks in Lustau’s cellars. Classified as VORS (Very Old Rare Sherry), it has an average age of more than 30 years, resulting in remarkable concentration, complexity and depth while retaining impressive balance and freshness.
On the palate, it is rich and intensely layered, with flavours of dried figs, dates, raisins and molasses complemented by notes of dark chocolate, espresso, liquorice and caramel. Despite its density and sweetness, a thread of natural acidity provides lift and definition, preventing the wine from becoming cloying. The finish is extraordinarily long, with lingering notes of dried fruit, cocoa and spice.
