The 2025 Dormilona Cabernet Sauvignon is a distinctive Margaret River Cabernet Sauvignon made by winemaker Jo Perry with a low-intervention approach. Fruit comes from the Yungarra site, where established vines grow on gravelly, loamy and limestone-rich soils. It offers blackcurrant, blackberry and dark cherry with dried herbs, earthy spice and a savoury mineral edge.
On the palate, it is medium-bodied and energetic, with juicy dark fruit, bright acidity and fine, gently chewy tannins. The hand-picked fruit is destemmed and fermented in clay amphora, then basket-pressed back into amphora before bottling. With no reliance on oak, the style remains fresh, textural and distinctly savoury.
