The Gippsland Pinot Noir is a blend of all the new and grafted vines from the Avon Vineyard, showcasing three Pinot Noir clones—MV6, Abel, and 114. This wine is crafted as our expression of a “village” Pinot Noir: a true representation of the broader Gippsland region and the diversity within the site. The fruit was hand-picked into 15kg baskets, hand-sorted, and gently destemmed into fermenters. Fermentation lasted around 20 days, followed by pressing and maturation in large-format oak—specifically 1800L foudres—for 10 months.
