The 2024 Bondar Midnight Hour Shiraz is a distinctive single-vineyard Shiraz from the Rayner Vineyard in McLaren Vale, South Australia. Sourced from old vines planted in 1950 on clay over limestone soils, this limited-release wine is inspired by the elegant, whole-bunch style of the Northern Rhône. Naturally fermented with 100% whole bunches and matured for 15 months in seasoned French oak, it opens with aromas of blackberry, black cherry and violet, layered with cracked pepper, olive, smoked spice and savoury herbs.
On the palate, it is medium to full-bodied with fine-grained tannins, vibrant natural acidity and a beautifully structured texture. Concentrated flavours of dark berries, liquorice and black olive are complemented by peppery spice and subtle oak, leading to a long, savoury finish. The old vines and whole-bunch fermentation bring both depth and freshness, creating a Shiraz that is powerful yet finely balanced.
Ben's Recommendation: At Wine More Cellars, this is an excellent choice for customers who enjoy refined McLaren Vale Shiraz with savoury complexity and elegant structure. Pair it with grilled lamb, slow-cooked beef, venison or mushroom dishes. Enjoy after a short decant, or cellar for the next 10–15 years as it develops additional savoury depth and complexity.
