The 2024 Bernard Defaix Chablis Grand Cru Bougros is a powerful 100% Chardonnay from the western edge of Chablis’ Grand Cru slope. The domaine’s parcel sits high on the slope over Kimmeridgian soils, benefiting from excellent sun exposure. The 2024 opens with dried pear, green apple and white peach, layered with shellfish-like minerality and subtle quinine notes.
On the palate, it is full-bodied and concentrated, combining generous fruit with pronounced saline minerality, freshness and a long, bone-dry finish. Fermentation and maturation take place in oak barrels, with extended ageing on the lees adding texture and depth. Burghound rated the 2024 92–95 points and named it a “Sweet Spot” wine, suggesting significant ageing potential.
Ben’s Recommendation:
At Wine More Cellars, this is an outstanding choice for Chablis collectors seeking Grand Cru Chardonnay with power, saline intensity and serious cellar potential. Best enjoyed from around 2030–2040, although patient cellaring should reward beyond this window. Ideal with turbot, grilled lobster, scallops, roast barramundi, asparagus or roast chicken.
