The 2021 Yalumba The Signature Cabernet Sauvignon Shiraz is a classic Barossa blend of 53% Cabernet Sauvignon and 47% Shiraz. The nose is layered with blackcurrant, dark cherry and blackberry, complemented by violet, liquorice, black pepper, cedar and subtle savoury spice.
On the palate, it is full-bodied and refined, with concentrated dark berry fruit, balanced acidity and fine, layered tannins. Nineteen months of maturation in French and Hungarian oak adds cedar and spice complexity, leading to a long, structured finish with excellent depth.
