The 2020 Fontodi Pastorelo is a remarkable Tuscan red from one of Chianti Classico’s most revered estates. The nose reveals black cherry, plum and wild blackberry alongside notes of violet, tobacco leaf, cedar and sweet spice. The palate is richly layered and beautifully structured, combining concentrated dark fruit with polished tannins and vibrant acidity. Hints of liquorice, graphite, Mediterranean herbs and crushed stone add depth and complexity, while the finish is long, refined and remarkably persistent. A superb Tuscan red that beautifully balances richness, structure and finesse. Complex, age-worthy and deeply expressive, it pairs wonderfully with bistecca alla Fiorentina, braised beef, lamb, wild boar and aged Pecorino. Enjoy with a generous decant if drinking now, or cellar through 2040–2050 as it develops greater savoury complexity, tertiary character and refinement.
