A finely etched cool-climate Chardonnay from Ricky Evans’ high-altitude Waverley Vineyard just east of Launceston. More restrained and mineral-driven than the richer Three Wishes bottling, this wine focuses on precision, tension and purity. The nose shows white peach, nectarine and lemon zest alongside crushed stone, sea spray, fennel and subtle almond pastry notes. There’s a distinctive mineral and ozone-like freshness that gives the wine impressive detail and lift.
On the palate, it is taut and linear with bright citrus acidity, saline minerality and gentle lees texture. Grapefruit pith, fresh almond and fine spice carry through a long, focused finish with excellent tension and finesse.

A beautifully precise, Burgundy-inspired Tasmanian Chardonnay with outstanding minerality and structure. More restrained and acid-driven than many Australian Chardonnays, making it ideal for lovers of Chablis or cooler white Burgundy styles. Excellent with oysters, scallops or roast chicken.
