The 2023 Sato La Ferme de Sato Les Violettes Pinot Noir is a finely detailed Central Otago Pinot Noir from Sato’s estate vineyard at Mount Pisa. The nose is highly perfumed, showing wild strawberry, raspberry and cranberry alongside violet, dried herbs and subtle spice. The vineyard’s alluvial soils, with schist and quartz gravel, contribute to its distinctive mineral character.
On the palate, it is medium-bodied with bright acidity, defined tannins and vibrant red fruit. Natural fermentation with 100% whole bunches and 21 months in seasoned French oak adds savoury complexity while keeping the fruit clear and focused, leading to a long, linear and finely structured finish.

At Wine More Cellars, this is an excellent choice for Pinot Noir drinkers who enjoy perfumed, structured Central Otago reds with restrained oak and savoury complexity. Best enjoyed from 2027 onwards or carefully cellared for further development. Ideal with roast duck, grilled salmon, mushroom risotto, lamb or semi-firm cheeses.
