Rather than using four different varieties of wine to craft the single Clos des Épeneaux, Paul opted for a simpler approach by using just two wines to produce the perfect blend. Rather than selecting from the four different areas within the Clos, Paul decided to make one wine using grapes from older vines and another from younger vines, and then combined the two for barrel aging. The result is an incredibly impressive and well-rounded wine with substantial weight and intense, deep red fruit flavours. Despite being a warm site, the wine exhibits a finely calibrated balance of power and richness. Additiolly, the wine boasts sophisticated notes of spice and cedarwood, while a refreshing line of acidity invigorates the palate, lending a bright and lively quality to the entire experience. Overall, this is a truly sophisticated wine.
