The 2023 Carousal Riesling is a bright, site-driven Riesling from Clare Valley, South Australia, made by Patrick Sullivan. Sourced from a vineyard with terra rossa soils over limestone bedrock, it shows vibrant lime and citrus alongside subtle floral notes, a touch of honey and distinctive stony minerality.
On the palate, it is dry, crisp and pleasantly textural with racy acidity and concentrated citrus fruit. The fruit was directly pressed before natural fermentation lasting around six to eight weeks, then matured on fine lees until bottling. Waxy lime and citrus give way to a savoury, mineral-driven finish with gentle richness.
