2024 The Pawn El Desperado Sauvignon Blanc - The fruit is picked when there is an optimal balance between acidity and flavour, often a very tight window with Sauvignon Blanc. The grapes are placed into the press with a small proportion of whole bunches and stalks. The juice is cold settled overnight , with a small proportion decanted into French Oak barrels for wild ferment.
Light, pale and bright lemon colour. Super fragrant with classic cut grass and passionfruit aromatics. The palate mirrors the nose, tropical fruits and cut grass complexities bound in a bright net of acidity. A touch of sweetness through the middle but finishes with a clean crunchy brush at the medium length end. - 90 points, Stuart Knox
