Fermented in a ceramic egg and left on lees for ten months. The nose is a combition of dried chamomile and bath salts, with some yuzu and bergamot citrus elements. A juiciness with fruit tingle acidity domites the palate, backed by a refreshing crunch and wet chalk, almost quinine-like bitterness tidying up the finish.
