The 2025 Patrick Sullivan Woori Yallock Chardonnay is a site-driven Yarra Valley Chardonnay from the Lusatia Park Vineyard in the Upper Yarra. Planted in 1985 on a north-facing slope with distinctive red basalt soils, the vineyard produces Chardonnay with impressive length and mineral character. The nose shows lime, lemon and grapefruit alongside white peach, hazelnut, subtle spice and lightly toasted notes.
On the palate, it is concentrated yet precise, with ripe orchard fruit balanced by zesty acidity and a bright mineral core. The hand-harvested fruit was whole-cluster crushed before fermentation in French oak barriques, with 30% new oak, followed by full malolactic fermentation, regular lees stirring and ten months maturation in barrel.
