The 2025 Patrick Sullivan Chardonnay is a refined Limestone Coast Chardonnay sourced from vineyards across Mount Gambier, Coonawarra and Wrattonbully in South Australia. Shallow volcanic soils over limestone and basalt contribute to its distinctive mineral character. The nose shows lime, lemon and grapefruit alongside white peach, hazelnut, gentle spice and lightly toasted notes.
On the palate, it is fresh and concentrated with zesty acidity, ripe stone fruit and a bright mineral core. The fruit was whole-cluster crushed and pressed before primary fermentation in a combination of barrique and tank, with approximately 25% new oak adding subtle richness and complexity without overwhelming the fruit.
