Assyrtiko
Assyrtiko is one of Greece’s most important indigenous white grape varieties, best known for producing vibrant, mineral-driven wines from the volcanic island of Santorini in the Aegean Sea. The grape thrives in Santorini’s harsh growing conditions, where volcanic soils, strong winds and intense sunlight create wines with remarkable concentration and freshness.
Assyrtiko is widely admired for its naturally high acidity, which allows the wines to remain crisp and structured even in warm climates. Typical flavour profiles include lemon, lime, green apple and white peach, often accompanied by distinctive saline and mineral notes that reflect the volcanic terroir.
While Santorini remains the grape’s most famous home, Assyrtiko is now increasingly planted across mainland Greece and other wine regions, where it continues to produce expressive and age-worthy white wines.
Today Assyrtiko is recognised internationally as one of the great white grape varieties of the Mediterranean, offering a unique combination of freshness, structure and terroir expression.
