The 2020 Adams Ingelheim Spätburgunder Pares is the flagship Pinot Noir of AdamsWein, sourced from the estate’s oldest vines in the historic Pares vineyard in Ingelheim. This exceptional site sits on deep limestone soils with a high proportion of fossil-rich marine deposits, producing wines of remarkable depth and mineral precision. Farmed biodynamically by Dr. Simone Adams, the wine was fermented with 100% whole bunches and matured for 18 months in French barriques, showcasing the estate’s commitment to site-driven, Burgundian-inspired Pinot Noir.
The nose is intensely aromatic, revealing red cherry, wild strawberry and cranberry alongside rose petal, blood orange, spice and crushed stone. The palate is layered and beautifully structured, combining vibrant red fruit with silky tannins, bright acidity and pronounced limestone minerality. Powerful yet refined, it finishes long and savoury with exceptional balance. Falstaff awarded the wine 95 points, while Robert Parker’s Wine Advocate rated it 94 points, praising its finesse, energy and ageing potential.

A serious German Pinot Noir that comfortably sits among the country’s finest expressions of Spätburgunder. Elegant, complex and built for the cellar, it pairs beautifully with duck, pigeon, roast quail, pork loin and mushroom-based dishes. While already impressive with a decant, it will continue to evolve gracefully through 2038–2045.
