On the evening of March 10th, Wine More Cellars had the pleasure of hosting a very special wine tasting event dedicated to one of the most iconic producers in Chablis — Domaine William Fèvre.
The masterclass was hosted by Pierre-Antoine Ballan, Asia Pacific Sales Manager of Les Domaines Barons de Rothschild (Lafite), who guided our guests through the fascinating world of Chablis, its unique terroir, and the winemaking philosophy behind Domaine William Fèvre.
The event was made possible thanks to the generous support of Negociants Australia, who provided the wines for this unforgettable tasting.

An Evening Dedicated to Chablis
Held at Wine More Cellars, the masterclass took our guests on a journey through the Chablis region — from village wines to Premier Cru expressions.
Pierre-Antoine shared insights into:
-
The history of Chablis
-
The importance of Kimmeridgian limestone soils
-
The stylistic differences between Chablis, Premier Cru and Grand Cru
-
The winemaking approach of Domaine William Fèvre
Guests had the opportunity to taste a carefully selected lineup of wines while learning about the subtle differences between vineyard sites and vintages.
The room was filled with lively discussion, curiosity, and of course many great glasses of Chablis.
A Wine That Stole the Show
While every wine showed beautifully during the tasting, the clear favourite among our guests was the:

Why Domaine William Fèvre Is One of Chablis’ Greatest Producers
Domaine William Fèvre is widely regarded as one of the benchmark producers in Chablis. The estate owns one of the largest holdings of Premier Cru and Grand Cru vineyards in the region, and is known for producing wines that truly express the purity of Chablis terroir.
Their philosophy focuses on:
-
sustainable vineyard practices
-
minimal intervention winemaking
-
preserving the natural minerality and freshness of Chardonnay grown in Chablis
This commitment to terroir-driven winemaking is exactly why the wines performed so beautifully during the masterclass.
