A vibrant and highly textural white blend from Pat Underwood, combining Riesling, Pinot Gris and a small dash of Chardonnay from the granite soils of Dash Farms in Faraday. Made with a mix of stainless steel, amphora and oxidative handling, the wine balances freshness, savoury texture and energetic drinkability beautifully. The nose shows grapefruit, green mango and Meyer lemon alongside almond, ginger, white nectarine and saline mineral notes. There’s a bright pithy freshness with subtle chalky and savoury complexity throughout.
On the palate, it is light to medium-bodied with juicy citrus fruit, zingy acidity and a fine chalky texture. Fresh, crunchy and highly drinkable, with a lightly bitter mineral finish that keeps the wine refreshing and food friendly.
Ben’s Recommendation:
A seriously fun modern Victorian white - somewhere between skin-contact Pinot Gris, textured Riesling and alpine Italian white energy. Bright, savoury and perfect with seafood, tempura, roast pork or sunny afternoon drinking. Best served well chilled. Drink now through 2029+.
