The 2024 Entropy Wines Sauvignon Blanc Sémillon is a distinctive white blend from the dry-grown Warragul Vineyard in Gippsland, Victoria. Made from equal parts Sémillon and Sauvignon Blanc, it offers layered aromas of chamomile, lemon oil and wild honey alongside green herbs and subtle waxy notes, reflecting the warmer conditions of the 2024 growing season.
On the palate, it is concentrated and textural with beeswax, pineapple core and candied citrus peel balanced by fine stony minerality and fresh acidity. Indigenous fermentation takes place in French oak, followed by full malolactic fermentation and 12 months on lees.
