The 2023 Sato L’Atypique Pinot Gris is a distinctive skin-contact wine from Central Otago, made from hand-picked Pinot Gris grown on alluvial soils over schist gravel. The nose is complex and aromatic, showing orange peel, dried apricot and guava alongside jasmine, ginger, white pepper and subtle red fruit notes.
On the palate, it is dry and medium-bodied with vibrant acidity and a firm, finely textured grip from extended skin contact. Natural fermentation with 29–36 days on skins is followed by 14 months in French oak, bringing savoury depth and texture before a long, lightly saline finish.
