The 2023 Domaine Clément Lavallée Chablis 45° is a distinctive Chardonnay from a steeply sloping vineyard in Chablis, northern Burgundy. Named for the dramatic inclination of the site, it shows bright lemon and lime alongside green apple, orchard fruit, delicate florals and subtle savoury notes of chestnut and lightly salted butter.
On the palate, it is dry, concentrated and energetic, with vibrant acidity giving definition to crisp citrus and orchard fruit. A pronounced saline and mineral character runs through the wine, while careful élevage provides additional texture and depth without overwhelming its freshness. The finish is long, precise and distinctly mineral.
Ben’s Recommendation:
At Wine More Cellars, this is an excellent choice for Chablis drinkers looking for a more concentrated and textural expression with bright acidity, saline freshness and mineral depth. Enjoy now or cellar for further development. Ideal with oysters, scallops, grilled fish, lobster, roast chicken or creamy seafood dishes.
