The 2023 Domaine Clément Lavallée Chablis 1er Cru Côte de Jouan is a finely structured Chardonnay from a tiny Premier Cru parcel in Chablis. Grown on clay-limestone soils over Kimmeridgian marl, it opens with pear, white peach and citrus alongside orange peel, subtle vanilla and distinctive chalky mineral notes.
On the palate, it is concentrated yet energetic, with bright acidity bringing precision to ripe orchard and stone fruit. Fermentation takes place naturally with indigenous yeasts in oak and tank, followed by maturation in older 228-litre barrels and additional ageing in stainless steel. The wine is bottled without fining or filtration, finishing with excellent freshness and a precise, chalky mineral character.
