The 2021 Domaine Clement Lavallee Auxerre Blanc Rouge Ma Pierre is an elegant Pinot Noir from northern Burgundy. Sourced from a south-facing parcel of mature vines growing on white clay soils, it shows bright cherry and raspberry alongside delicate florals, subtle herbs, spice and chalky mineral notes.
On the palate, it is fresh and finely textured, with juicy red fruit, lively acidity and supple tannins. The fruit undergoes a short cold maceration before indigenous yeast fermentation and around 18 days on skins. Maturation takes place for approximately 18–19 months in neutral barrels on fine lees, adding texture without masking the purity of the Pinot Noir.
