The 2007 Château de Fargues Sauternes is a magnificent sweet wine from one of Bordeaux’s most revered estates. Owned by the Lur Saluces family, former proprietors of Château d’Yquem, Château de Fargues is renowned for producing exceptionally long-lived Sauternes of extraordinary concentration and purity. The 2007 vintage is considered one of the greatest sweet wine vintages of the modern era, with ideal conditions for noble rot (Botrytis cinerea) producing wines of remarkable richness, freshness and complexity.
The nose is intensely aromatic, revealing apricot, candied orange peel and pineapple alongside notes of acacia honey, saffron and vanilla. The palate is rich and luscious yet perfectly balanced by vibrant acidity, creating a wine of both power and elegance. Layers of marmalade, baked peach, exotic spice and crème brûlée unfold through a seamless, lingering finish. Despite its generosity, the wine remains remarkably fresh and precise, a hallmark of great Château de Fargues.
Ben’s Recommendation:
A world-class Sauternes and one of the finest sweet wines of Bordeaux. Luxurious, complex and incredibly age-worthy, it pairs beautifully with foie gras, blue cheese, fruit tarts and crème brûlée. While already stunning, this wine is still youthful and will continue to evolve through 2050 and beyond, developing even greater layers of honeyed richness, spice and complexity.
