Prevost doesn’t declare a vintage with his wines. Instead his wines bare the code LC. (Lot Consigné and the vintage year). Les Béguines is almost to 100% Pinot Meunier, although there is now a small amount of Chardonnay, Pinot Noir and Pinot Blanc that has been planted next to the Pinot Meunier parcel. Usually one of the last ones to pick, the Champagne from Prevost are barrel fermented and not topped up, allowing a light veil of yeast to form on top of the wine and develop a "aged" character to his wines. Second fermentation in bottle is made with very little dosage.
