The 2023 Dott. Ribolla Gialla is a distinctive Heathcote white made from the northern Italian Ribolla Gialla variety. Naturally high in acidity and well suited to Chalmers’ dry Heathcote site, it shows lemon and lime, feijoa and subtle botanical notes with hints of toasted hazelnut.
On the palate, it is light and fresh with zesty acidity, citrus fruit and a surprisingly textural feel. Natural fermentation on fine solids followed by lees maturation in stainless steel adds gentle weight and a fine phenolic grip, leading to a crisp, dry and mineral-driven finish.
