The 2023 Dott. Pavana is a rare and distinctive Heathcote red from Chalmers, made from Pavana, a variety historically grown in north-eastern Italy. The nose shows mulberry, red cherry and damson with earthy notes, white pepper and subtle savoury spice.
On the palate, it is medium-bodied with vibrant berry fruit, fresh acidity and a fine, grippy tannin structure. Red and dark fruits are joined by pepper, liquorice and earthy mineral notes, leading to a dry, savoury finish with plenty of freshness and definition.
