The 2019 Yalumba The Signature Cabernet Sauvignon Shiraz is one of Australia’s benchmark Cabernet–Shiraz blends, produced by the historic Barossa Valley winery Yalumba. First released in 1962, The Signature has become a flagship expression of the classic Australian partnership between Cabernet Sauvignon and Shiraz, combining structure, depth and longevity with remarkable consistency. The 2019 vintage was dedicated to long-time winemaker Kevin Glastonbury and chief viticulturist Rob Nettelbeck, recognising their significant contribution to Yalumba’s success.
The blend comprises 52% Cabernet Sauvignon and 48% Shiraz, sourced entirely from Barossa Valley vineyards, including some parcels with vines dating back to 1925. The wine was matured for 19 months in a combination of French and Hungarian oak, with approximately 25% new oak, contributing both structure and complexity without overwhelming the fruit.
The nose is intensely aromatic and layered, showing blackcurrant, blackberry, dark plum and boysenberry alongside cedar, dark chocolate, tobacco, eucalyptus and savoury spice. Critics have praised the wine’s balance of richness and refinement, with reviews highlighting its seamless structure, deep fruit concentration and polished tannin profile. Scores around 95–96 points have been awarded by leading Australian reviewers.
On the palate, it is full-bodied and powerful yet remarkably composed. Waves of black fruit, cassis, liquorice and dark chocolate are supported by finely integrated tannins, fresh acidity and persistent spice notes. The Shiraz provides generosity and plush texture, while the Cabernet delivers shape, definition and longevity. The finish is exceptionally long, carrying cedar, tobacco, dried herbs and savoury oak nuances.
The 3-litre format is particularly significant for collectors. Large-format bottles mature more slowly and gracefully than standard bottles, preserving freshness and complexity over decades while making an impressive centrepiece for serious cellars and special occasions.
Ben’s Recommendation: At Wine More Cellars, The Signature remains one of Australia’s great classic reds and one of the finest examples of the historic Cabernet–Shiraz blend. Compared to Penfolds Bin 389, it often shows more Barossa generosity and plushness; compared to purely varietal Cabernet or Shiraz, it offers a uniquely Australian balance of structure, spice and richness. The 2019 vintage is particularly impressive for its concentration, refinement and ageing potential. In 3L format, this becomes a serious collector’s wine capable of evolving beautifully for 20–30+ years. Drink from 2028 onwards or decant extensively if opening young. Perfect with prime rib, lamb, game meats or long celebratory dinners.
