The pressings selection is a collection of the very last few litres of wine from the fermented grape skins when the press is nearing completion. These precious few litres are loaded with fine graphite-like dy and firm tannins. the 'pressings' were transferred into 500L puncheons for malolactic fermentation. Robust tannins rule the wine at this early stage. Blackstrap licorice, blackberry, cassis, bitter chocolate and cedary vanilla oak remain firm, taut and desperately in need of a steak, or something high in protein, to bring about more approachable drinkability now. - 91 points, Jeni Port
