The ‘house style’ of winemaking is to fully destem all reds are fully de-stemmed before being cold soaked prior to natural ferments kicking off. There is a judicious yet confident use of quality oak in the top tier wines, minimal sulphur is used, and wines are traditionally bottled unfiltered. All of these ‘decisions’ are made to ensure that across all levels and appellations the wines deliver outstanding quality whilst expertly representing the terroir that they hail from.
