On the palate, it is medium-bodied with vibrant acidity, fine tannins and juicy red berry fruit. Circulus uses cold soaking and whole-berry fermentation in open-top fermenters for its Pinot Noir, followed by maturation in a mix of old and new oak, adding gentle spice and texture while maintaining freshness and varietal character.
