The 2021 Seville Estate Single Vineyard Seville Chardonnay is a refined Upper Yarra Chardonnay sourced from a single east-facing vineyard planted in 1996. Whole bunch pressed and fermented in French oak puncheons and foudre, the wine reflects Seville Estate’s restrained cool-climate style, balancing stone fruit purity, mineral tension and subtle oak complexity with impressive precision and finesse.
On the palate, it is medium-bodied with vibrant acidity and a layered, creamy texture, delivering flavours of nectarine, grapefruit and white peach alongside cashew, nougat and delicate flinty mineral notes. The oak remains finely integrated, supporting the fruit without overpowering it, while the finish is long, savoury and finely balanced with excellent freshness and structure.
