The 2021 Seville Estate Single Vineyard Seville Pinot Noir is a refined Upper Yarra Pinot Noir sourced from a single vineyard site planted predominantly to MV6 clone vines. Crafted in a classic cool-climate style, the wine combines bright red fruit, savoury spice and fine tannin structure, with partial whole bunch fermentation and maturation in French oak adding complexity while preserving purity and regional expression. The cooler 2021 vintage delivered freshness, finesse and excellent natural balance throughout the wine.
On the palate, it is light to medium-bodied with silky tannins and vibrant acidity, delivering flavours of cranberry, strawberry and red cherry layered with dried rose petal, Asian spice and subtle earthy notes. The texture is supple and finely structured, while restrained oak influence supports a long, savoury finish with refreshing bitter orange and mineral detail.
