Traditional Method. Whole bunch pressed, only the cuvee used (512.5L/t). Primary fermentation in stainless steel before bottling, followed by secondary fermentation in bottle with four years on lees. Assemblage: 43% 2020 pinot noir, 44% 2020 chardonnay, 13% reserve wine (2019 vintage – 6% chardonnay, 7% pinot noir).
