The 2022 Bindi Dhillon Glenhope Macedon Ranges Rosé is a beautifully textured, dry rosé that showcases the precision and cool-climate elegance of the Macedon Ranges. Produced by Michael Dhillon of the acclaimed Bindi Wines, the Dhillon range explores the outstanding fruit from the Glenhope Vineyard, a granite-based site in the northern Macedon Ranges. Crafted from a blend of Merlot and Shiraz, the wine is gently pressed, fermented to dryness with wild yeasts in old French oak and matured on lees for six months, resulting in a rosé that offers far greater texture and complexity than a typical Provençal-style rosé.
The nose is fresh and beautifully perfumed, revealing aromas of red rose petals, redcurrant and just-ripe strawberry layered with raspberry, delicate cream and subtle spice. As the wine opens, hints of white pepper, crushed granite and floral lift emerge, adding further complexity while maintaining exceptional purity and freshness. The aromatic profile is elegant, vibrant and distinctly cool-climate, balancing bright fruit with refined savoury nuances.
On the palate, it is light to medium-bodied with a silky, finely textured mouthfeel and vibrant natural acidity. Flavours of strawberry, redcurrant and raspberry are supported by subtle creaminess from barrel fermentation and lees ageing, while the granite soils contribute freshness and mineral precision. Despite its delicate appearance, the wine possesses impressive concentration and structure, with a dry, energetic finish that lingers with notes of red berries, gentle spice and crushed stone. The style is sophisticated and gastronomic, offering considerably more depth than many modern rosés while remaining wonderfully refreshing.
