Crafted by Ricky Evans of Two Tonne Tasmania, the wine comes from the mature Three Wishes vineyard planted in 2000 to MV6 and D5V12 clones on dolerite and quartzite soils. Sheltered from the cold Bass Strait winds and positioned on a warm north-east-facing site, the vineyard produces fruit with both perfume and depth, resulting in a Pinot Noir that balances Burgundian restraint with Tasmanian vibrancy. Around 40% whole bunch fermentation and 11 months in seasoned French oak add complexity and structure without overwhelming the purity of the fruit.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBen’s Recommendation:\u003c\/strong\u003e\u003cbr\u003eAt Wine More Cellars, this is a superb example of modern Tasmanian Pinot Noir — elegant, savoury and finely structured while still retaining impressive depth and charm. Compared to richer Mornington Peninsula styles, the Three Wishes leans more toward tension, perfume and mineral detail, sitting stylistically somewhere between Tasmania and cool-climate Burgundy. The 2023 vintage is especially compelling, combining concentration from the warm sheltered site with the freshness and refinement that define great Tasmanian Pinot. Already highly expressive with some air, but it will comfortably cellar through 2034+ as it develops further earthy and tertiary complexity.
