This is Empirical’s house spirit, if you like, simply the product of fermented and distilled koji barley, pilsner malt and saison yeast, no extra botanicals added. It’s a lovely, bright, easy-to-drink introduction to the Empirical world: sake-like aromas, nutty, fruity and floral, then long bright tangy flavours in the mouth. A good summer spirit. Empirical recommends serving it with iced green tea and lemon verbena as a garnish.
